In a previous post, I made reference to Chilean Baby Back Ribs and the way they were cut. Having worked in and around this industry for nearly 20 years, I've seen ingredient trends come and go. Some of the ingredients and menu items graduated from fad to classic (Buffalo Hot Wings) while others have simply been replaced with "the next big thing". Remember Oleo?
Well, there is one ingredient that continues to inspire professional chefs and has been for over 6000 years. It's been referred to as "the magic ingredient". Today we pay homage to that tremendous product.
